How do I make black sticky rice pudding in a rice cooker?

When most people first purchased their rice cooker, the thought was usually that they would be able to prepare some quick rice meals for their family, and perhaps make a soup or two if the night called for it. But one of the best ways to both utilize your rice cooker as well as complement a delicious meal is to create black sticky rice pudding – a dessert dish that you can cook with your rice cooker and enjoy with your whole family.

 
   

 

  

 

What is Black Sticky Rice?

Black sticky rice pudding is made using black sticky rice – a form of glutinous rice with a dark purple color and a naturally sweet flavor. One of the best parts about this type of pudding is that it is healthier than most other desserts (though there will be quite a bit of sugar) and does not have much fat or calories.

How to Make Thai Sticky Rice Pudding

Though you will be using your rice cooker for much of the cooking, this type of sticky rice does require quite a bit of work outside of the rice cooker. You will first need:

·        1 cup of black sticky rice

·        1/3 cup of brown sugar

·        ¼ teaspoon salt

·        1½ cups of coconut milk

·        1½ cups of water

Notice that you are going to be placing a lot of liquid into the black sticky rice – more than you would be with other types of sticky rice, which are generally at a 1:1 ratio. Like most puddings, you want it to be a little “slimier” than you would normally want your rice.

Your first step is going to be to soak the rice in water for a long time – overnight if possible.  Keep it in the fridge to avoid any bacteria, but let it soak for at least 6 to 10 hours or longer.

Next, drain the rice completely, and place it into your rice cooker along with the 1½ cups of water, 1 cup of coconut milk, and all of the brown sugar. Let the rice cooker continue for a while – it may take as long as 3 hours to cook until all the water has been absorbed by the rice. If at any point you find that the rice does not appear to have the texture you want, add another half cup of water until finished.

After the black sticky rice has finished cooking, you can add the remaining coconut milk, stirring gently and careful to not damage the rice. Then you can serve it however you like. Some people enjoy adding fruits, like strawberries, while others prefer to add a dab of coconut whip cream (which is healthier than standard whip cream.

Optional – Make More Pudding-like

If you prefer your pudding to be more wet, like most other types of pudding, simply add more water from the beginning (if possible) before you start your rice cooker. If you add one or two more cups, you will get a more porridge like rice which may be enjoyable for those that like that type of pudding.
